The Art of the Perfect Pour-Over

Pour-over coffee rewards attention to a few simple variables: grind size, water temperature, and the steadiness of your pour. Get those right and you will taste flavors in your beans you never knew were there.

Start with a medium-fine grind and water just off the boil. Pour a little to bloom the grounds for thirty seconds, letting them release trapped gas, then pour in slow, steady circles. A gooseneck kettle makes this control effortless.

Aim for a total brew time of around three minutes. If it runs fast and tastes sour, grind finer; if it drags and tastes bitter, grind coarser. A few mornings of small adjustments and you will dial in a cup that beats the cafe.
