Eating Around the World Without Leaving Your Kitchen

How a curious cook can travel through dinner, one cuisine at a time.

One of the quiet joys of cooking is that a single kitchen can hold the whole world. A Tuesday in Tokyo, a Thursday in Oaxaca, a Sunday in Provence, all of it is possible with a stocked pantry and a little curiosity.

Pick a cuisine and cook three of its dishes in a month rather than one of everything at random. Repetition is how techniques sink in. The second time you fold a dumpling or temper a spice it stops being a project and starts being a skill.

Keep a running list of the dishes that surprised you and the ones you want to try next. Treated this way, dinner becomes an ongoing trip with no end date and no jet lag.
